Black and Orange Salad

Description

This dramatic salad is typically Moroccan--the dark black olives contrasting with oranges, a favourite Moroccan fruit.

Serves 4

Ingredients

3 oranges
115g/4oz/1cup black olives, pitted
15ml/1tbsp chopped fresh coriander
15ml/1tbsp chopped fresh parsley
30ml/2tbsp olive oil
15ml/1tbsp lemon juice
2.5ml/½tsp paprika
2.5ml/½tsp ground cumin

Instructions

1. Cup away the peel and pith from the oranges and cut into wedges.

2. Place the oranges in a salad bowl and add the black olives, coriander and parsley.

3. Blend together the olive oil, lemon juice, paprika and cumin. Pour the dressing over the salad and toss gently. Chill for about 30 minutes and serve.
