Description
We made this tomatillo salsa for the first party we held at our casita in San Miguel de Allende, Mexico. It was a welcome addition to our table; spicy and light alternative to accompany our traditional guacamole. Tomatillo salsa is a variation of a green salsa. It is great as a dip, but can also be used over grilled pork, chicken or fish.
Ingredients
1 pound tomatillos, husked and rinsed
2 serrano chiles
1 white onion, sliced
3 cloves garlic
1 avocado, sliced
1/2 cup water
1/3 fresh cilantro, chopped
1 teaspoon salt, or to taste
Instructions
1. Line a baking sheet with foil and place tomatillos, serrano chiles, onion and garlic on it. Roast under broiler until slightly blackened, about 5 minutes on each side. Let cool.
2. Place the broiled ingredients, as well as the avocado and water, in a blender until chopped. Add more water if needed to achieve consistency.
3. Pour the mixture into a large bowl. Stir in the cilantro and salt and it's ready to eat!
