Ingredients
1 cup unbleached white flour
1/4 tsp. salt
1/2 tsp. baking soda
4 tbsp. unsalted butter, softened
7 tbsp. sugar
1 egg
1/2 cup buttermilk
3 tbsp grated fresh ginger
zest of two lemons, minced
Instructions
Preheat oven to 375F and butter muffin tins. Mix flour, salt, baking soda in bowl. Cream butter and sugar together in mixing bowl, add the egg and beat until smooth. Add buttermilk and mix until blended, being sure to scrape down the sides. Add dry ingredients and mix until smooth. Stir in grated ginger and lemon zest. Spoon batter into muffin tins to that each cup is 3/4 full. Bake for 15 to 20 minutes, until the muffins are set inside and turn golden.
