Ingredients
3 large cucumbers
3/4 cup cider vinegar
1/4 cup sugar
1/4 cup chopped parsley
4 green onions, chopped
Salt
Sauce
1 cup sour cream
1 tablespoon sugar
1 teaspoon dry mustard
2 tablespoons cider vinegar
1 teaspoon salt
Instructions
Peel cucumbers, cut in half lengthwise, and seed. Slice very thin. Sprinkle lightly with salt and let stand for 1 hour. Drain. Combine 3/4 cup cider vinegar, sugar, parsley, and green onions. Marinate cucumbers in this for 2 to 3 hours. Drain. Combine sauce ingredients. Toss cucumbers carefully with sauce.
