Description
This is AMAZING! Don't let the health factor fool you... I can eat a whole head of kale this way. This is the simple recipe but you could add diced radishes, tomatoes, other veggies. You can vary the cheese. Lacinato kale, AKA dinosaur kale is the best but others are fine too. Salt and lemon juice are approximate, adjust to taste.
Ingredients
one bunch of kale
one small lemon
scant 1/4 cup good olive oil
scant 1 tsp. good sea salt
one medium carrot
One red bell pepper
1/4 cup chopped walnuts or pine nuts
1/4 cup feta chopped into small bits
some cilantro (optional)
Instructions
Toast nuts in the oven for few minutes, careful not to burn.
Trim hard stems off of kale and chop into medium sized bits
Put kale in bowl, sprinkle salt on kale and massage kale with your hands for three minutes, until it shrinks down and gets juicy.
Chop pepper, carrot and any other additions into small pieces and add into kale mixture.
Add olive oil, juice of the lemon and nuts, stir.
Add chopped up feta and stir.
Get ready to devour! So healthy, so crunchy, so good!
