Ingredients
3 pounds ripe tomatoes
2 medium cucumbers
1 medium onion
1/4 green pepper (more if you like)
1 clove garlic
2 cups tomato juice
3 tablespoons tarragon vinegar
Salt and freshly ground pepper to taste
Tabasco sauce to taste
1/2 teaspoon dried basil
1/2 teaspoon dried chervil
1/2 teaspoon dried tarragon
3 tablespoons chopped parsley
1 tablespoon chopped chives
3 tablespoons lemon juice
1 teaspoon paprika
1/2 cup olive oil
Instructions
Peel and dice tomatoes without losing any juice. Peel and dice the cucumbers, onion, and green pepper. Rub a large bowl with garlic clove and add all ingredients. Stir and chill.
