Delicious summer side dish, use any color cherry tomatoes, vary with mozzarella. Serves two. Serve immediately after cooking.
extra virgin olive oil 1 clove garlic, minced 1 zucchini, cut into slices or bite-size pieces if you prefer a handful of small cherry tomatoes Feta cheese, to taste fresh basil, sliced into small, thin strips kosher salt and coarse ground pepper
Heat olive oil in a skillet over medium heat Add zucchini, season with salt and pepper. Sautee until golden brown, about 6-8 minutes. If sliced, can flip from side to side. Add minced garlic and stir. Add the tomatoes and heat through until they start to wrinkle. Turn off heat. Sprinkle with feta and stir until cheese melts. Stir in basil and serve!
