Description
The herb mixture used here, fines herbes, is a classical French combination of equal parts of parsley, chives, tarragon, and chervil. You can mix your own or buy those of several well-known spice companies.

Instructions
Wash mushrooms. Remove stems, finely chop, and set aside. Melt butter in a heavy skillet, and when foaming begins to subside, add mushroom caps and sauté over medium heat for about 2 minutes. Combine cream cheese, blue cheese, mushroom stems, onion, and files herbes. Mix well. Stuff mushroom caps with cheese mixture, dust with paprika, and broil until bubbly.
