Delicious and healthy, a nice crunchy salad
-A bunch of Kale (I like lacinato AKA dinosaur for salads) cut into bite size pieces
-Cabbage, cut thin, about equal amount to kale
-Carrots, grated, three or to taste
-sunflower seeds or ant nuts you like
- sea salt
- 1/2 cup tahini, stir well!
- 1 tbsp olive oil or sesame oil (optional!)
- 1/4 cup water
- 5 tablespoons fresh lemon juice
- 4 tablespoons tamari (or soy sauce)
- 2 tablespoons honey
- 1 small garlic clove, minced
- 1/4 teaspoon cayenne
Place Kale into large bowl, sprinkle with couple pinches of sea salt and massage with your hands about three minutes, until kale shrinks down and gets softer.
Add cabbage and carrots. Sprinkle with sunflower seeds
To make dressing place all ingredients into a blender and blend until smooth. You may choose to add more water if the dressing is too thick for your liking.
Toss salad with dressing or allow for individual dressing.
You can also drizzle the top of the salad with some honey for added yum!
Makes more dressing that needed, store for another use, like dipping baby carrots!
